Amelia Levin
amelia levinAmelia Levin is a Chicago-based freelance writer, cookbook author, former magazine editor and certified chef who writes about food, foodservice and the restaurant industry. Her work has appeared in a variety of magazines and newspapers, as well as online. She started her career in journalism as a hard news reporter for the Chicago Tribune covering police, fire, courts and City Hall, and she served for five years as the senior editor for the former Reed Business Information’s food and hospitality group of magazines (Restaurants & InstitutionsFoodservice Equipment & Supplies, Chain Leader and HOTELS).

James Cochefstable_corwellrwell is the creator of Tomato Sushi, a sustainable, vegan alternative to bluefin tuna. An Atlanta native, Corwell carries the professional designation of ACF-Certified Master Chef. He was previously the chef at Wine Spectator Greystone Restaurant, Napa Valley; Le Foret, New Orleans; and Haddingtons, Austin. He was voted best new chef by New Orleans Magazine in 2010. Tomato Sushi has been featured in Bon Appetit, NPR, Fast Company and Civil Eats.

Paul Sorgule, M.S., AAC

Sorgule6Paul Sorgule has been a chef and educator for more than four decades holding positions of hotel executive chef, food and beverage director, faculty member, dean of culinary arts and provost at a prominent culinary college.  In 1988, Sorgule, as a member of the New England Culinary Team, earned a gold medal in the “culinary Olympics” in Frankfurt, Germany, and, in 2001, was recognized by the America Culinary Federation as the National Chef Educator of the Year.  He has served on various ACF national committees and was honored with the President’s Medallion as a result.  He was invited to cook at the prestigious James Beard House in 2008.  Currently, Chef Sorgule serves as president of Harvest America Ventures, a restaurant and culinary school consulting and training company he formed in 2012.  He lives in the Adirondacks of New York State with his wife of 40 years. Sorgule writes a weekly blog entitled: Harvest America Cues and has authored two books:  “In the Shadow of Cooks” and “The Event That Changed Everything”.
