A seasoned culinary competitor and ACF Culinary Team USA member and coach, this Certified Master Chef will draw on his deep experience to bring insights to culinary leaders. He opens the ACF National Convention with a powerful discussion about the struggles all chefs face.

Learn techniques to improve employee retention, coach your team to learn from mistakes, and show them how to safely thrive in this high-stress profession.

Advanced Pastry: Focus on Modern Chocolate Techniques with Frank Vollkommer, CMPC

Learn advanced pastry techniques from one of the few CMPCs in the country. Certified Master Pastry Chef, Frank Vollkommer, CMPC, will share professional tips and techniques to create multi-textural chocolate snack bars. His demonstration will include the use of a stone grinder to prepare fillings, the creation of textural elements, and creative ways for enrobing and garnishing. He will also demonstrate several hand-made techniques and discuss the use of modern equipment and technology, such as water jet cutting and chocolate enrobers.

Chef Vollkommer is the Director of Culinary Industry Development at Auguste Escoffier School of Culinary Arts and has over 30 years of experience within all sectors of the culinary, pastry, and confectionery industries.

Making a Difference Through Food & Hospitality with Ed Leonard, CMC, AAC

Master Chef Edward Leonard will share his powerful message about culinary leadership. In this important session, he will explain which qualities all chefs must hone and how you can do it. When these skills are combined with innovation and commitment, it can ensure success even in challenging times.

Chef Leonard will share his insights, philosophy, and passion for our profession as he presents his demonstration that will focus on the need for ongoing innovation.

ACF certified chefs will earn continuing education hours (CEHs) for attending educational seminars, demonstrations, trade show, and general sessions at the ACF National Convention. Full registrations for both in-person and virtual will earn at least 23 CEHs.
