During this exciting Latin-Pitmaster mash-up demo of two recipes, they will talk about the usage of pork within their communities. Also, listen in on how they have become successful and managed through the pandemic within their own operations.
This demo is available to attendees of the ACF National Convention, both in-person and virtually via live stream, on Wednesday, August 4, at 11 am EST. In-person attendees will be able to visit the Smithfield Culinary Food Truck after their presentation for a pop-up tasting!

Meet the Chefs
Chef Aarón Sánchez
Sánchez is an award-winning chef, TV personality, author and philanthropist. He is chef/owner of Johnny Sánchez in New Orleans, and a judge on FOX’s hit culinary competition series MasterChef and MasterChef Junior. He is partner/creative director of Cocina, the first online content platform dedicated to celebrating Latin lifestyle through its vibrant culinary culture. Aarón grew up in the restaurant business and is passionate about preserving his family’s legacy through food and encouraging diversity in the kitchen.
A third-generation cookbook author, Aarón has written two cookbooks – “La Comida del Barrio” and “Simple Food, Big Flavor”. In fall 2019 he published a memoir titled “Where I Come From: Life Lessons From a Latino Chef”. In October 2020, Aarón and his mother, Zarela Martínez, launched their podcast Cooking in Mexican from A to Z.
Aarón has won a James Beard Award for Television Studio Program and was recognized by the Hispanic Federation with the Premio Orgullo Award for being a leader in the Hispanic community. In 2016, Aarón founded the Aarón Sánchez Scholarship Fund (ASSF), an initiative empowering aspiring chefs from the Latin community. ASSF provides recipients with full culinary scholarships to schools in New York City and ongoing mentorship.
Pitmaster Chris Lilly
Lilly is head chef of the Big Bob Gibson Bar-B-Q Competition Cooking Team, the winner of 17 World BBQ Championships in meat categories and holds a record 5 Memphis In May World Grand Championships. He won the American Royal International Invitational and captured the International Jamaican Barbeque Championship. He also won the title of “King of the Smokers” at a national barbecue Invitational.
Lilly is a 2016 inductee into the Barbecue Hall of Fame and in 2019 he was presented with the 2019 Pioneer Award for his work in barbecue. Also, in 2020, Lilly was awarded the Legends of Barbecue Pitmaster Award by the National Barbecue Association. He was an instructor for Pork Summit at Culinary Institute of America in Napa Valley and was a presenter at the Low-Country and Caribbean Food Conference at Johnson and Wales University. Lilly has appeared twice at the James Beard Foundation.
Lilly is a Celebrated Chef of the National Pork Board and serves as the national spokesperson for Kingsford Charcoal. He’s a proud ambassador for Smithfield Pork and Yeti Coolers. His private catering jobs include work for high profile celebrities such as Keith Urban, and companies like Nissan, NASCAR, and Microsoft.
In 2009, Lilly authored a compilation of recipes, stories, and advice: BIG BOB GIBSON’S BBQ BOOK, Recipes and Secrets from a Legendary Barbecue Joint. In 2014, Lilly’s authored a second book titled: FIRE & SMOKE, A Pitmaster’s Secrets.
